whole lamb for your freezer - $250 (edwardsville)

We finally had a decent crop of lambs this spring that has resulted in 8 lambs for slaughter later this year. Now taking deposits - half down, half on delivery. Late fall/early winter butchering.

Our lambs typically dress at 90-110 lbs, and give package weight of 45-60 lbs. And if you've priced lamb in the grocery store, even ground lamb is usually around $8-10/lb. Rack of lamb can be $15-18/lb. You can get the whole thing for between $4 and 6/lb.

A whole lamb will typically give
two leg roast - usually bone-in; can be split into upper/lower leg
two shoulder roast; can be done as steaks
two packages of individual riblets
four to five 1lb packages of loin chops
a few 1lb packages of cubed for stew
4 to 5 1lb packages of ground
up to four shanks
organs as desired

As butchering is done to order, any cuts can be converted to stewing cubes or ground. Sausages will be an extra butcher charge.
